Sri Lankan Recipes by Curry Mad – Purple Yam Pudding

Curry-Mad

Ingredients

1 cup Coconut Milk

1 Purple Yam

Pinch Salt

1/4 cup Sugar

1 cup Water

Method

Before handling the Yam, apply some Cooking Oil on your palms.

Peel the Yam and cut into cubes approximately 2-3 cm. Put these into a pan with the Water and boil. When well boiled, soft, mash using a Potato Masher and add the Coconut Milk, Sugar and Salt. Taste, mix well and add any other ingredients if required.
Pour into a flat tray and allow to cool for at least 6 – 8 hours.
