Carrot Cake – By Malsha – eLanka Ingredients: 2 cups All-Purpose Flour 1 cup White Sugar 1/2 cup Brown Sugar 3/4 cup Vegetable Oil 2 cups Finely Grated Carrots 2 Large Eggs 1/2 cup Buttermilk 2 tsp Baking Powder 1/2 tsp Bicarbonate of Soda 2 tsp Vanilla 1 tsp Ginger Powder 2 tsp Cinnamon 1/2 tsp Nutmeg 1/2 tsp Salt 1/2 cup Raisins (optional) 3/4 cup Chopped Walnuts Instructions: Preheat the oven to 170 degrees Celsius. In a large bowl, combine vegetable oil, white sugar, and brown sugar. Beat until the mixture is light and creamy. Mix in the eggs one at a time.
