Ingredients:
- 2 cups All-Purpose Flour
- 1 cup White Sugar
- 1/2 cup Brown Sugar
- 3/4 cup Vegetable Oil
- 2 cups Finely Grated Carrots
- 2 Large Eggs
- 1/2 cup Buttermilk
- 2 tsp Baking Powder
- 1/2 tsp Bicarbonate of Soda
- 2 tsp Vanilla
- 1 tsp Ginger Powder
- 2 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1/2 tsp Salt
- 1/2 cup Raisins (optional)
- 3/4 cup Chopped Walnuts
Instructions:
- Preheat the oven to 170 degrees Celsius.
- In a large bowl, combine vegetable oil, white sugar, and brown sugar. Beat until the mixture is light and creamy.
- Mix in the eggs one at a time. Add buttermilk and vanilla, then mix until well combined.
- Sift in the all-purpose flour, baking powder, bicarbonate of soda, salt, cinnamon, nutmeg, and ginger. Gently mix until the dry ingredients are just incorporated.
- Add the grated carrots, chopped walnuts, and raisins (if using). Gently fold them into the batter until evenly distributed.
- Line two baking pans with parchment paper. Divide the batter equally between the two pans.
- Bake in the preheated oven for 30-35 minutes or until the cakes are well-baked. Note: Baking time may vary depending on your oven.
- Allow the cakes to cool completely in the baking pans before removing them.
