Sri Lankan Recipes by Curry Mad – Rock Melon (Cantaloupe) & Milk Custard

 

Rock-Melon

Ingredients

2 Eggs
2 cups Milk
1 Tea cup Cornflour
1/2 Rock Melon, cubed and mashed in blender

Method

Pour the milk into a large enough pan, break the eggs into it and whisk/beat it until it is reasonably thick (I am lazy so I used a `Bamix). Then add the Corn Flour, a little at a time beating/whisking all the time. Then the mixture will get thick,. add the Rock Melon & mash & , allow to cool and enjoy. If not sweet enough, add some sweet wine such as the Brandy & Grapefruit wine, Milk wine, or some honey. If you prefer a little more `tang’, add a bit of lime/lemon juice.
