YALA, SRI LANKA – Hilton Yala Resort has unveiled a thoughtfully curated new à la carte menu at Sandali Grill, introducing an elevated dining experience that celebrates premium ingredients, contemporary culinary techniques, and the rich flavours of Sri Lanka’s southern coastline. The refreshed menu has been designed to complement the resort’s signature open-air grill concept, where guests can savour exceptional cuisine against the backdrop of the Indian Ocean and the wilderness of Yala.
Inspired by the surrounding landscapes and the abundance of locally sourced produce and seafood, the new menu brings together an extensive selection of handcrafted starters, premium grilled meats and seafood, hearty mains, signature desserts, and Hilton Yala’s exclusive house-made gelatos and sorbets.
Guests can indulge in refined creations such as Carpaccio di Manzo, Tuna Tartare, and Rocky Beach, before progressing to signature mains including Fresh Water Prawns with Sauce Nantua, Barramundi, Yellow Fin Tuna, Rangers Rustic Beef, Steak Frites, and a selection of premium cuts and seafood prepared over the grill. The menu also caters to a wide range of dietary preferences with carefully crafted vegetarian dishes, fresh salads, and plant-based options, while concluding the dining journey with desserts inspired by tropical flavours, alongside Hilton Yala’s signature artisanal gelatos and sorbets.
