Cashew trees thrive in the dry zone of Sri Lanka, particularly in areas like Puttalam, Hambantota, and Moneragala. The tree is well-suited for arid climates and requires minimal maintenance. The cashew nut grows attached to the cashew apple, a fleshy, pear-shaped fruit. The nuts are harvested, dried, and processed before they are ready for consumption. Traditional methods of processing involve sun-drying and roasting the nuts to remove the toxic shell oil.

  • Traditional sweets: They are used in sweets like cashew toffee and certain varieties of kavum.
