With the expert guidance of O Tama Carey, owner and chef of Sydney hotspot Lankan Filling Station, Matt McConnell pilots the good ship Bar Lourinhã to tropical waters, taking the restaurant’s Portuguese underpinnings as a place from which to leap into an exploration of Sri Lanka’s starring role on the trade-routes of flavour.
Tama will be going Lankan (“mostly!”) while Matt plays around the borders of the Portuguese-Lankan connection, all plated up in a classic Lourinhã style across six snacks, six raciones and then meeting together in a collaborative dessert.
