Sri Lankan Recipes by Curry Mad – Innala White Curry
Ingredients
1 x 1″ piece Cinnamon (Quill)
1/2 Tin Coconut Milk
1 Sprig Curry Leaves
1 Tsp Fenugreek seeds
2-3 Green Chillies
1 Bottle Innala (500g)
1/2 Lemon (Zest & Juice)
1 Tblsp Maldive Fish chips
1/2 Onion
1 x 1″ piece Rampe (Pandanus)
Salt to taste
1 Tsp Turmeric
Preparation
Cut the Onions into rings, Green Chillies into small angled pieces.
Put all ingredients, except Coconut Milk and Lemon Juice, into a pan or clay pot and boil in water over low to medium heat.
When simmered, add Coconut Milk and Lemon Juice. Stir well and turn off heat. Enjoy with boiled rice.
