Sri Lankan Recipes by Curry Mad – `Trinco’ Prawn Omelette

Trincomalee is, according to research on Google, the hottest place in Sri Lanka, hence the title `Trinco’, short for Trincomalee located in the North East of the island, where we lived for about 4 years.

Ingredients

1 Tblsp Chilli powder
1 Sprig Curry leaves

2 Eggs

1 Tsp Garlic & Ginger, paste or fresh
250g Green Prawns, fresh
Oil for frying
1 Tblsp Oyster Sauce

Preparation

Mix the ingredients, except the Eggs and Oil and leave overnight or at least 6 – 8 hours in the fridge. Divide the mixture into 2 portions and fry in a small pan, without over cooking.

Break an Egg on to the Prawn mixture and when cooked, remove from heat. Repeat this process for the other portion.
