Easy and Delicious Banana Cake Recipe – By Nadeeka – eLanka

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the mashed bananas.
  5. Gradually add the dry ingredients to the banana mixture, alternating with buttermilk. Begin and end with the dry ingredients. Mix until just combined. Do not overmix.
  6. Stir in the vanilla extract.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  10. Once the cake has cooled, you can frost it with cream cheese frosting or simply dust it with powdered sugar before serving.
