Traditional Sri Lankan taste Mango Chutney Recipe – By Malsha – eLanka

mango chutney

Ingredients:

  • 1/2 kg Mangoes
  • 1 cup White Vinegar
  • 1/2 cup Water
  • 1 teaspoon Red Chilli Powder
  • 400-425 grams Sugar
  • 4 teaspoons Salt
  • 2 teaspoons Ginger (cut into thin, long strips)
  • 2 cloves Garlic (finely chopped)
  • 3/4 teaspoon Cardamom Powder
  • 60 grams Raisins

Instructions:

  1. Wash the mangoes thoroughly and dry them.
  2. Peel the mangoes and cut them into very thin, long slices, removing the seeds.
  3. Finely chop the garlic and cut the ginger into thin, long strips.
  4. In a large pot, cook the mango slices, garlic, and ginger in water over low heat until tender.
  5. Once tender, add the sugar, vinegar, red chilli powder, cardamom powder, and salt. Stir well.
  6. Continue stirring the mixture until it thickens and turns golden.
  7. Remove the pot from the heat and add the raisins. Mix well.
  8. Allow the chutney to cool before transferring it to an airtight jar.
  9. Store the jar in a cool, dark place.
