Out of all the pickles, baby jackfruit pickle is a simple yet delicious recipe that many people crave. The best part is that it’s easy to make, with a straightforward process. The taste of the pickle improves as it matures.
Ingredients:
- Baby Jackfruit – 500g
- Goraka – 2 pieces
- Salt – 1 tsp (for boiling)
- Turmeric Powder – ½ tsp (for boiling)
- Red Onions – 150g
- Green Chilies – 20
- Kochchi Chilies – 10
- Mustard Paste – 5 tbsp
- Chopped Ginger – 1 inch piece
- Chopped Garlic – 10 cloves
- Cinnamon Stick
- Pepper Powder – 2 tsp
- Vinegar – 8 tbsp
- Salt – 2 tsp
- Chili Powder – 1 ½ tsp
- Turmeric Powder – ½ tsp
- Carrot – 1
- Sugar – 30g
Method:
- Prepare Baby Jackfruit:
- Remove the rinds of the baby jackfruit. Before starting, apply lime or lemon juice on your hands, knife, and cutting board to prevent the sticky latex from sticking.
- Cut the baby jackfruit into fine pieces.
- Boil Baby Jackfruit:
- Put the jackfruit pieces into a pan. Add goraka, salt, turmeric powder, and enough water to boil them. Ensure the jackfruit pieces are tender but not fully cooked. They will reach the perfect texture when mixed with vinegar.
- Drain the excess water and let the jackfruit cool down.
- Prepare Chilies and Vegetables:
- Wash and dry the green chilies and kochchi, then slit them from the middle. If you want a less spicy pickle, add only the green chilies.
- Once the jackfruit has cooled, cut it into thin slices.
- Prepare Pickle Mixture:
- In a clay pot, combine the mustard paste, chopped ginger, chopped garlic, cinnamon, pepper powder, salt, chili powder, and vinegar.
- Heat this mixture on the stove until well combined.
- Add Vegetables:
- Add the red onions (which should be cleaned, washed, and dried completely) to the heated mixture.
- Next, add the green chilies, kochchi chilies, and sliced carrots (ensure they are also water-free).
- Add sugar to enhance the flavor of the pickle, or skip this step if you prefer.
- Combine Ingredients:
- Finally, add the boiled baby jackfruit and thoroughly mix it with the vinegar mixture.
- Remove the pot from the stove and let the pickle cool down slightly.
- Store the Pickle:
- Store the cooled pickle in a clean, dry glass bottle or a clay pot with a tight cover.
- Let the pickle mature for 2-3 days for the best flavor.
