Yule Log Cake Recipe – By Malsha – eLanka

Christmas Yule Log Cake - elanka

Ingredients:

For the Cake:

  • 4 eggs, separated into yolks and whites
  • 1/2 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup cake flour
  • 1/2 tsp instant coffee granules
  • 1 tsp baking powder
  • 1/4 tsp salt

For the Filling:

  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar, plus extra for dusting
  • 1/2 tsp vanilla extract

For the Frosting:

  • 6 oz dark or bittersweet chocolate chips (3/4 cup)
  • 1.5 tbsp softened unsalted butter
  • 1 tsp instant coffee granules
  • 2/3 cup heavy cream
  • 1/2 tbsp Kahlua
  • 1/2 tsp vanilla extract

For Garnish:

  • Cranberries and rosemary

Instructions:

  1. Preheat the oven to 425°F and line a half-sheet baking pan with parchment paper, securing it with office binder clips.
  2. In a stand mixer, whisk egg whites on high until soft peaks form. Set aside.
  3. In a large bowl, whisk together egg yolks and sugar until pale. In a separate bowl, sift cocoa powder, cake flour, coffee granules, baking powder, and salt. Add dry ingredients to the yolks mixture and whisk until combined.
  4. Gently fold in half of the whipped egg whites to loosen the batter, then add the remaining half, folding carefully.
  5. Pour the batter into the prepared pan and smooth with a spatula. Bake for 6-7 minutes until the cake springs back. Allow it to cool for 2 minutes.
  6. Sprinkle powdered sugar on a kitchen towel. Invert the cake onto the towel, peel off the parchment, and roll the cake with the towel. Let it cool in this rolled shape.
  7. For the frosting, combine chocolate chips, coffee granules, Kahlua, butter, and vanilla. Pour hot cream over the mixture, stir until smooth, and refrigerate for 30 minutes.
  8. Whip heavy cream until thick, then add vanilla and powdered sugar.
  9. Unroll the cooled cake, spread whipped cream, and roll it back up. Cut a 2-inch slice at an angle and attach it to the main log.
  10. Whisk the chilled frosting briefly, then spread it over the cake log and stump with a rubber spatula. Use a fork to create log-like texture.
  11. Decorate with cranberries and rosemary for a festive touch.
