Gulgula is a traditional sweet snack popular in North India, especially in Bihar, Uttar Pradesh, and Uttarakhand. It’s a kind of deep-fried sweet fritter made mainly from wheat flour and jaggery (or sugar). The texture is soft inside and slightly crisp outside — similar to a mini doughnut, but richer in flavor due to jaggery and sometimes cardamom.

It’s often prepared during festivals, religious offerings, or simply as an evening snack with tea.

Simple Gulgula Recipe

Ingredients:
• Wheat flour – 1 cup
• Jaggery (or brown sugar) – ½ cup
• Water – about ½ cup (to make jaggery syrup)
• Baking soda – a pinch (optional, for softness)
• Cardamom powder – ¼ tsp (optional)
• Oil – for deep frying

Method:
1. Prepare jaggery syrup:
• Heat ½ cup of water and add the jaggery.
• Stir until it melts completely, then let it cool slightly.
• Strain to remove impurities if needed.
2. Make the batter:
• In a bowl, mix wheat flour, baking soda, and cardamom powder.
• Gradually add the jaggery syrup while stirring.
• The batter should be thick — like cake batter — not runny.
• Let it rest for 10–15 minutes.

3. Frying:
• Heat oil in a deep pan on medium heat.
• Drop small spoonfuls of the batter into the oil.
• Fry until golden brown on all sides.
• Remove and drain on paper towels.

4. Serve:
• Enjoy warm as a snack or dessert.
• You can sprinkle grated coconut or sesame seeds for extra flavor.

Tip:
Some people add mashed banana or grated coconut into the batter — it makes the Gulgulas extra soft and flavorful
