Easy Homemade Indi Appa Kottu (Quick Version)
String Hopper Kottu is a creative and flavorful Sri Lankan dish made by stir-frying shredded string hoppers with vegetables, eggs, and spices. It’s a unique twist on the popular street food “kottu roti” and is both wholesome and satisfying.
Ingredients:
For the base:

8–10 string hoppers (indi appa), shredded

2 tablespoons oil (coconut oil preferred)

1 medium onion, finely sliced

2 green chilies, sliced

1 sprig curry leaves
-
2 garlic cloves, minced
-
1-inch piece of ginger, minced

1 medium tomato, chopped
Spices:

½ teaspoon turmeric powder

1 teaspoon curry powder
-
1 teaspoon chili flakes (adjust to taste)

Salt to taste
Optional Additions:

2 eggs, lightly beaten (for egg version)

½ cup cooked chicken or beef (for meat version)

½ cup vegetables (carrot, cabbage, leeks – finely sliced)
Instructions:

Prepare the string hoppers: Shred the string hoppers using your hands or scissors and keep aside.

Make the tempering:

Heat oil in a pan or wok.

Add onion, green chilies, curry leaves, garlic, and ginger.

Sauté until fragrant and golden.

Add tomatoes and spices:

Add chopped tomatoes and cook until soft.

Add turmeric, curry powder, chili flakes, and salt. Mix well.

Optional – Add eggs or meat:

Push mixture to one side and scramble eggs on the other side of the pan.

Add cooked meat or veggies if using.

Mix in shredded string hoppers:

Add the shredded string hoppers.

Toss everything together on medium heat until evenly coated with the spices.

Taste and adjust:

Add more salt or chili if needed.

Garnish with chopped coriander or a squeeze of lime.
