Let’s start by crafting the essential shawarma roti. Here’s what you need:

Ingredients:

  • 200 grams of bread flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt powder
  • 2 tablespoons of olive oil or white coconut oil
  • Slightly hot water

Roti Preparation:

  1. In a bowl, mix bread flour, baking powder, salt powder, and oil. Form a non-sticky dough by gradually adding a little hot water.
  2. Knead the dough for about three minutes, then shape it into a circle and apply a bit of oil on top. Cover it with a wet cloth for fifteen minutes.
  3. Divide the dough into six small balls, let them rest for 10 minutes, and roll them out thinly on a floured board using a rolling pin.
  4. Cook the roti on a tray over low heat, applying a little oil. Flip and cook both sides until brown spots appear.
  5. Place a savory filling in the center and fold the roti.
