Homemade Date Cake Recipe – By Malsha – eLanka

Indulge in the delightful flavors of a homemade Date Cake with this easy-to-follow recipe. This moist and aromatic cake is a perfect blend of pitted dates, cashew nuts, and a touch of cinnamon, creating a symphony of tastes that will tantalize your taste buds. The subtle hints of rose, almond, and vanilla essence add an extra layer of sophistication to this delectable treat. Follow these simple steps to create a moist and flavorful Date Cake that will become a family favorite. Whether it’s for a special occasion or a simple craving, this Date Cake is a delightful choice for any time of the year.

Ingredients:

  • 350 grams of pitted dates
  • 175 grams of all-purpose flour
  • 50 grams of cashew nuts
  • 150 grams of sugar
  • 3 eggs
  • 1 teaspoon of cinnamon powder
  • 50 grams of semolina
  • 100 grams of butter
  • 25 grams of raisins
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of rose essence
  • 1/4 teaspoon of almond essence
  • 1 teaspoon of vanilla essence

Method:

  1. Start by soaking the pitted dates in hot water for a while, then drain and clean them.
  2. After draining, sprinkle baking soda over the dates and pour hot water over them. Stir with a spoon and let it sit for 30 minutes.
  3. In a separate bowl, combine the flour, baking powder, cinnamon powder, and semolina.
  4. To the soaked dates, add salt and then gradually add the flour mixture. Mix well to form a batter and set it aside.
  5. In another bowl, cream the sugar and butter together until the mixture is light and fluffy. Beat in the eggs one by one and add the vanilla and the other essences.
  6. Combine the wet and dry mixtures, stirring until everything is thoroughly combined. Then, fold in the crushed cashews and raisins.
  7. Preheat your oven to 150°C (300°F) for 10 minutes and prepare a baking tray by lining it with parchment paper.
  8. Pour the cake mixture into the prepared tray and level it out. Sprinkle the broken cashews on top.
  9. Place the tray in the preheated oven and bake for 45 to 50 minutes.
  10. Once baked, let it cool before enjoying your delicious Date Cake.
