  • 2 cups rice flour
  • 1 cup kithul treacle (or substitute with sugar syrup)
  • ½ teaspoon cardamom powder
  • A pinch of salt
  • Optional: chopped cashew nuts

Step-by-Step Recipe

1. Roast the Rice Flour

  • Heat a pan on low flame
  • Add the rice flour and roast it gently
  • Stir continuously until it turns slightly off-white and aromatic
  • Do not let it brown

2. Prepare the Syrup

  • In another pan, add treacle (or sugar with a little water)
  • Heat until it becomes slightly thick (sticky consistency)
  • Mix well

3. Combine Ingredients

  • Add roasted rice flour gradually into the syrup
  • Mix continuously to avoid lumps
  • Add cardamom powder and salt
  • If using cashews, add them now

👉 The mixture should become thick and dough-like

4. Shape the Aluwa

  • Remove from heat
  • Transfer mixture onto a greased tray or flat surface
  • Flatten using a rolling pin
  • Cut into diamond or square shapes while still warm

5. Cool and Serve

  • Allow it to cool completely
  • Once set, separate the pieces
