Sri Lankan Pittu Recipe – By Malsha – eLanka

Ingredients:

  • 2 cups of rice flour (roasted)
  • 1 cup of grated coconut
  • 1 teaspoon of salt
  • Water (as needed)

For Serving:

  • Coconut milk
  • Curry of your choice (fish, chicken, vegetable, etc.)

Instructions:

  1. Prepare the Rice Flour:
    • Roast the rice flour in a dry pan over low heat for about 5-7 minutes until it is slightly golden and aromatic. Be careful not to burn it. Let it cool.
  2. Mix the Flour and Coconut:
    • In a large bowl, combine the roasted rice flour, grated coconut, and salt.
  3. Add Water:
    • Gradually sprinkle water into the mixture while mixing with your hands. The goal is to get a crumbly texture, similar to breadcrumbs. The mixture should be moist but not wet, and it should hold together when pressed between your fingers.
  4. Prepare the Steamer:
    • You can use a traditional pittu bamboo steamer or any steamer you have at home. If you are using a regular steamer, you can line it with a clean cloth or use perforated plates.
  5. Steam the Pittu:
    • Fill the steamer with the pittu mixture. If using a bamboo steamer, you can lightly pack the mixture inside. If using a regular steamer, spread the mixture evenly without pressing it down too much.
    • Steam the pittu for about 10-15 minutes, or until it is cooked through. You can check by pressing a small portion with a spoon; it should feel firm and not sticky.
  6. Serve:
    • Remove the pittu from the steamer and transfer it to a serving dish.
    • Serve hot with coconut milk and your choice of curry.

Tips:

  • The texture of the pittu mixture is crucial; it should be crumbly and moist but not too wet.
  • You can add a pinch of turmeric to the rice flour for a slight color variation.
  • For extra flavor, you can mix in finely chopped onions, green chilies, or herbs into the pittu mixture before steaming.
