Baked Penne Chicken Pasta Recipe – By Malsha – eLanka

Baked Penne Chicken Pasta Recipe - By Malsha - eLanka

Ingredients:

  • 500 grams of penne pasta
  • 10 tomatoes
  • 2 onions
  • 1 red bell pepper
  • 1 green bell pepper
  • 10 cloves of garlic
  • 200 grams of chicken
  • 200 grams of tomato sauce
  • 2 tablespoons pepper powder
  • 1/2 cup bread flour
  • 100 grams butter
  • 2 cups milk
  • Salt to taste
  • Olive oil or vegetable oil (about 4 tablespoons)
  • Grated mozzarella cheese (or any other type of cheese)
  • Optional: oregano for seasoning

Instructions:

  1. Cook the Pasta:
    • Boil the pasta in salted water with 1 tablespoon of oil until al dente. Drain and set aside.
  2. Prepare the Chicken:
    • Cut the chicken into large squares and set aside.
  3. Make Tomato Puree:
    • Remove the seeds from the tomatoes, blend them into a puree, strain, and cook on the stove until it thickens. Set aside.
  4. Prepare Vegetables:
    • Chop the garlic finely.
    • Finely chop the onions.
    • Cut the bell peppers into small squares.
  5. Cook the Vegetables and Chicken:
    • Heat 4 tablespoons of olive oil or vegetable oil in a large pan.
    • Add the onions and sauté until fragrant.
    • Add the chopped garlic and sauté briefly.
    • Add the chicken pieces and mix well.
    • Add the red and green bell peppers.
    • Add 2 tablespoons of pepper powder and salt to taste.
    • Add the prepared tomato puree and tomato sauce. Mix well and cook until it resembles a curry. Set aside.
  6. Make the White Sauce:
    • In another pan, melt the butter.
    • Add the bread flour and stir until combined.
    • Gradually add the milk, stirring continuously until the sauce thickens.
    • Season with pepper powder, salt, and oregano (if using). Remove from heat.
  7. Assemble the Pasta:
    • In a large bowl, combine the boiled pasta, chicken mixture, and white sauce. Mix well.
  8. Bake the Pasta:
    • Transfer the mixture to a baking dish.
    • Top with grated mozzarella cheese (or any cheese you prefer).
    • Bake in a preheated oven at 180°C (350°F) for 40 minutes, or until the cheese is melted and golden.

This dish serves four people.
