  • 1 cup coconut milk (thick or fresh)
  • 2 tablespoons jaggery (or brown sugar, to taste)
  • 1/2 teaspoon vanilla extract (optional, for added flavor)
  • A pinch of salt
  • Ice cubes (optional, for serving)
  • Water (as needed for consistency)

Instructions

  1. Prepare the wood apple pulp:
    Crack open the hard shell of the wood apple by tapping it on a hard surface. Scoop out the soft, sticky pulp using a spoon. Remove any seeds and place the pulp in a bowl.
  2. Sweeten the pulp:
    Add jaggery (or brown sugar) to the wood apple pulp and mash it well using a spoon or fork. The jaggery adds a natural sweetness that complements the tartness of the wood apple.
  3. Mix with coconut milk:
    Pour the thick coconut milk into the bowl of mashed wood apple pulp. Stir well to combine. You can adjust the consistency by adding a little water if the mixture is too thick. If you like a richer flavor, you can use freshly extracted coconut milk.
  4. Add flavor and seasoning:
