Sri Lankan coconut cake, also known as “Pol Cake,” is a delicious and popular dessert in Sri Lanka. It is a moist and fragrant cake made primarily with grated coconut and semolina. Here’s a recipe for you to try:

Ingredients:

  • 2 cups grated coconut
  • 1 cup semolina
  • 1 cup sugar
  • 1 cup plain yogurt
  • 4 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon cardamom powder
  • A pinch of salt
  • Sliced almonds or cashews for garnish (optional)

Instructions:

  1. Preheat your oven to 180°C (350°F) and grease a baking dish or line it with parchment paper.
  2. In a large mixing bowl, combine the grated coconut, semolina, sugar, baking powder, cardamom powder, and a pinch of salt. Mix well.
  3. In a separate bowl, beat the eggs until frothy. Add the beaten eggs and yogurt to the coconut mixture. Stir everything together until well combined. If the batter seems too dry, you can add a little more yogurt.
  4. Pour the batter into the prepared baking dish and spread it evenly. If desired, you can sprinkle some sliced almonds or cashews on top for added crunch and decoration.
  5. Place the baking dish in the preheated oven and bake for about 30-35 minutes or until the top turns golden brown and a toothpick inserted into the center comes out clean.
  6. Once baked, remove the cake from the oven and let it cool in the baking dish for a few minutes. Then transfer it to a wire rack to cool completely.
  7. Once the cake has cooled, you can slice it into squares or any desired shape and serve.
