Carrot Cake – By Malsha – eLanka

_Carrot Cake - eLanka

Ingredients:

  • 2 cups All-Purpose Flour
  • 1 cup White Sugar
  • 1/2 cup Brown Sugar
  • 3/4 cup Vegetable Oil
  • 2 cups Finely Grated Carrots
  • 2 Large Eggs
  • 1/2 cup Buttermilk
  • 2 tsp Baking Powder
  • 1/2 tsp Bicarbonate of Soda
  • 2 tsp Vanilla
  • 1 tsp Ginger Powder
  • 2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Salt
  • 1/2 cup Raisins (optional)
  • 3/4 cup Chopped Walnuts

Instructions:

  1. Preheat the oven to 170 degrees Celsius.
  2. In a large bowl, combine vegetable oil, white sugar, and brown sugar. Beat until the mixture is light and creamy.
  3. Mix in the eggs one at a time. Add buttermilk and vanilla, then mix until well combined.
  4. Sift in the all-purpose flour, baking powder, bicarbonate of soda, salt, cinnamon, nutmeg, and ginger. Gently mix until the dry ingredients are just incorporated.
  5. Add the grated carrots, chopped walnuts, and raisins (if using). Gently fold them into the batter until evenly distributed.
  6. Line two baking pans with parchment paper. Divide the batter equally between the two pans.
  7. Bake in the preheated oven for 30-35 minutes or until the cakes are well-baked. Note: Baking time may vary depending on your oven.
  8. Allow the cakes to cool completely in the baking pans before removing them.
