Sri Lankan Recipes by Curry Mad – “Wetakolu” Vegetable Curry (Ridge Gourd) Ingredients 1/2 `Wetakolu’/Ridge Gourd 1 x 1″ piece Cinnamon Quill 1/2 Tin Coconut Milk 1 Sprig Curry Leaves 1/4 Tsp Fenugreek seeds 1-2 Green Chillies 1 Tsp Lemon Zest 1 Tsp Maldive Fish chips 1 x 1″ piece Rampé (Pandanus) 1 Tsp Salt (To taste) 1 Tsp Turmeric 1/2 Cup Water Method Wash the Gourd and cut off the `Ridges’ using a Potato Peeler. Add the balance ingredients, except the Coconut Milk and Lemon Zest to a pan/pot with the water. Simmer and when almost done, add the Coconut Milk and Lemon Zest. Stir well and turn off the heat. Sri Lankan Recipes by Curry Mad – Innala White Curry Ingredients 1 x 1″ piece Cinnamon (Quill) 1/2 Tin Coconut Milk 1 Sprig Curry Leaves 1 Tsp Fenugreek seeds 2-3 Green Chillies 1 Bottle Innala (500g) 1/2 Lemon (Zest & Juice) 1 Tblsp Maldive Fish chips 1/2 Onion 1 x 1″ piece Rampe (Pandanus) Salt to taste 1 Tsp Turmeric Preparation Cut the Onions into rings, Green Chillies into small angled pieces. Put all ingredients, except Coconut Milk and Lemon Juice, into a pan or clay pot and boil in water over low to medium heat. When simmered, add Coconut Milk and Lemon Juice. Sri Lanka Festival 2016 draws unprecedented crowds in Canberra Canberra community came in large numbers to savour a little of Sri Lanka at the by the High Commission on Saturday 12th November in the High Commission premises. Over 3000 people and children representing the Commonwealth and Australian Capital Territory (ACT) governments, diplomatic corps, and the local community visited the Festival and enjoyed the food, culture and crafts of Sri Lanka. Australian Assistant Minister for Social Services and Multicultural Affairs Senator Zed Seselja was the Chief Guest. Former Sri Lanka cricketer Asanka Gurusinghe travelled all the way from Melbourne to be present at the Festival.
