Easy Snack for Sri Lanka Aurudu celebration – “Kokis” – By Nadeeka – eLanka

“Kokis” is a traditional Sri Lankan snack that is commonly made during the Sinhalese New Year or “Avurudu” festival. It is a crispy and deep-fried snack made from a batter of rice flour and coconut milk.

To make Kokis, the batter is first poured into a special flower-shaped mold, which is then deep-fried in oil until crispy and golden brown. The resulting snack is typically eaten with tea or as a treat during the New Year festivities.

Here’s a recipe for Kokis that you can try making at home:

Ingredients:

  • 1 cup rice flour
  • 1 cup coconut milk
  • 1/2 tsp turmeric powder
  • 1 spoon of sugar
  • Salt to taste
  • Oil for deep-frying

Instructions:

  1. In a mixing bowl, combine the rice flour, coconut milk, turmeric powder, sugar, and salt to taste. Mix well to form a smooth batter.
  2. Heat oil in a deep frying pan over medium heat.
  3. Dip the Kokis mold in the hot oil for a few seconds to heat it up. Then, dip the heated mold into the batter, making sure the batter covers the entire mold.
  4. Carefully place the mold with the batter into the hot oil and fry until the Kokis turns golden brown and crispy.
  5. Use a fork or a skewer to remove the Kokis from the mold and transfer it onto a plate lined with paper towels to absorb any excess oil.
  6. Repeat the process with the remaining batter until all the Kokis are made.

Kokis is best served fresh and hot, but it can be stored in an airtight container at room temperature for up to a week. Enjoy!
