Sri Lankan Love Cake Recipe - By Malsha - eLanka

Love Cake is a traditional Sri Lankan dessert that is rich, dense, and filled with aromatic flavors. Here’s a recipe for Love Cake:

Ingredients:

  • 250g semolina
  • 200g unsalted butter, softened
  • 200g caster sugar
  • 4 large eggs
  • 200g sweetened condensed milk
  • 100g cashew nuts, roughly chopped
  • 100g almonds, roughly chopped
  • 100g candied peel (such as candied lemon or orange peel), chopped
  • 1 tbsp rosewater
  • 1 tsp vanilla extract
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground nutmeg
  • Zest of 1 lime or lemon
  • A pinch of salt
  • A handful of cherries or dried fruit (optional, for decoration)

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease and line a square or rectangular cake tin with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and caster sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Gradually add the semolina to the butter and sugar mixture, stirring well to combine.
  5. Stir in the sweetened condensed milk, chopped cashew nuts, chopped almonds, chopped candied peel, rosewater, vanilla extract, ground cardamom, ground nutmeg, lime or lemon zest, and salt. Mix everything together until well combined.
  6. Pour the batter into the prepared cake tin and spread it evenly.
  7. If desired, decorate the top of the cake with cherries or dried fruit.
  8. Bake in the preheated oven for about 45-50 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the tin for about 10 minutes. Then transfer it to a wire rack to cool completely.
  10. Once the cake has cooled, you can cut it into squares or rectangles to serve.
