Watalappam is a popular Sri Lankan dessert made from jaggery (unrefined cane sugar), coconut milk, eggs, and spices such as cardamom and nutmeg. It is typically served during special occasions and is enjoyed for its sweet and creamy flavor.
Here’s a simple recipe for Watalappam:
Ingredients:
- 2 cups of jaggery
- 1 can of coconut milk (400 ml)
- 4 eggs
- 2 teaspoons of cardamom powder
- 1 teaspoon of nutmeg powder
- 1/2 teaspoon of salt
- 2 tablespoons of rice flour (optional)
Instructions:
- Heat jaggery in a saucepan over low heat until it dissolves completely.
- In a separate bowl, beat the eggs and set aside.
- Combine the coconut milk, dissolved jaggery, cardamom powder, nutmeg powder, and salt in a large mixing bowl.
- Stir in the beaten eggs and mix until everything is well combined.
- If using rice flour, add it to the mixture and mix until smooth.
- Pour the mixture into a greased baking dish and bake at 350°F for about 45 minutes or until the top is golden brown and the center is set.
- Allow the Watalappam to cool before serving. Enjoy!
