Sri Lankan popular traditional sweet Kalu Dodol – By Nadeeka eLanka

Sri Lanka Kalu Dodol is a popular traditional Sri Lankan sweet made from coconut milk, rice flour, and jaggery (a type of unrefined sugar). Here is a recipe for Sri Lanka Kalu Dodol:

Ingredients:

  • 2 cups rice flour
  • 2 cups grated jaggery
  • 2 cups thick coconut milk
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla essence
  • 2-3 cardamom pods, crushed
  • 1/4 cup cashew nuts, chopped (optional)

Instructions:

  1. In a heavy bottomed pan, mix together the rice flour, jaggery, and coconut milk until smooth.
  2. Add salt and crushed cardamom pods to the mixture and cook over medium heat, stirring constantly.
  3. When the mixture starts to thicken, reduce the heat and continue to stir for about 15-20 minutes until the mixture becomes thick and glossy.
  4. Add vanilla essence and cashew nuts (if using), and mix well.
  5. Pour the mixture into a greased dish and spread evenly.
  6. Let the mixture cool to room temperature, then cut into small squares or diamond shapes.

Sri Lanka Kalu Dodol can be stored in an airtight container at room temperature for up to a week. Enjoy!
