Sri Lanka New Year Food – Milk rice(Kiribath) and Lunu Miris recipe 

Milk Rice

In Sri Lanka, milk rice is a popular dish made with rice and coconut milk. It is typically served as a breakfast or dessert dish, and is often garnished with golden raisins or cashews. Milk rice is traditionally cooked in a pot or clay pot, but it can also be prepared in a rice cooker or pressure cooker. To make milk rice, the rice is cooked with coconut milk, water, and a pinch of salt until the liquid is absorbed and the rice is tender. The dish is then garnished with a sprinkle of coconut milk and served hot. Milk rice is enjoyed throughout Sri Lanka, and it is often served at special occasions and celebrations.

Here is a simple recipe for making milk rice at home:

Ingredients:

1 cup long grain white rice

1 cup coconut milk

1 cup water

pinch of salt

1 tablespoon butter or ghee (optional)

Instructions:

Rinse the rice in a fine mesh sieve until the water runs clear.

In a pot or saucepan, combine the rinsed rice, coconut milk, water, salt, and butter or ghee (if using). Stir to combine.

Bring the mixture to a boil over high heat, then reduce the heat to low and cover the pot with a tight-fitting lid.

Allow the rice to cook for 20-25 minutes, or until the liquid is absorbed and the rice is tender.

Once the rice is cooked, remove the pot from the heat and let it sit for 5-10 minutes to allow the rice to steam and absorb any remaining liquid.

Fluff the rice with a fork, then serve the milk rice hot, garnished with a sprinkle of coconut milk if desired. Enjoy!

Note: You can also prepare milk rice in a rice cooker or pressure cooker following the manufacturer’s instructions.

Lunumiris

Lunu miris is a popular Sri Lankan condiment made with red onions, chili peppers, and salt. It is typically served as a side dish or condiment, and is often used to add flavor and spice to a variety of dishes. Milk rice with Lunumiris is a very delicious dish in Sri Lanka

To make lunu miris, finely diced red onions and chili peppers are mixed together with salt and allowed to sit for a few minutes to allow the flavors to meld. The mixture can then be served as is, or it can be ground into a paste using a mortar and pestle. Lunu miris can be made with a variety of chili peppers, including dried or fresh red chili peppers, and the amount of chili peppers used can be adjusted to suit your preference for heat.

Lunu Miris

Here is a simple recipe for making lunu miris at home:

Ingredients:

1 red onion, finely diced

2-3 red chili peppers, finely diced (use more or less depending on your preference for heat)

1 teaspoon salt

A little lime juice

Instructions:

Combine the diced red onion, chili peppers, and salt in a small bowl.

Mix the ingredients together until they are well combined.

Allow the mixture to sit for 5-10 minutes to allow the flavors to meld. Then add some lime juice

Serve the lunu miris as is, or use a mortar and pestle to grind the mixture into a paste.

Enjoy the lunu miris as a condiment or topping for a variety of dishes.

Note: You can adjust the amount of chili peppers used in the recipe to suit your preference for heat. You can also use other types of chili peppers in place of red chili peppers, such as green chili peppers or bird’s eye chili peppers.
