An easy way to make Chicken biryani at home – By Malsha – eLanka

Chicken Biryani - eLanka

Ingredients:

For Rice:

  • 600g Rice
  • 5 cardamom pods
  • 3 cloves
  • A large piece of rumpe
  • A two-inch piece of cinnamon bark
  • 50g Margarine
  • Water as needed

For Biryani Masala:

  • ½ cup diced carrots
  • 1 cup diced beans
  • 1 cup pre-cooked green peas
  • 10 cashew flakes
  • 1 cup dried grapes
  • Crushed cardamom and 2 cloves
  • 1 stick of curry powder
  • 2 tbsp finely chopped coriander leaves
  • 2 tbsp finely chopped mint leaves
  • 1 large onion, finely sliced
  • 2 tsp ginger and garlic paste
  • 4 tbsp margarine or butter
  • 1 tbsp biryani masala powder
  • 1 tsp chili powder
  • 1 tsp turmeric powder
  • Chicken breast, thinly sliced into long strips (seasoned with a pinch of turmeric, lime juice, and salt)
  • 2 finely chopped tomatoes
  • Lime juice
  • Salt to taste

Method:

  1. Rinse the rice thoroughly and let it drain. In a saucepan or rice cooker, melt 50g of margarine. Once hot, add cardamom, cloves, cinnamon, and rumpe. Sauté the spices.
  2. Add the soaked rice and lightly sauté. Pour in enough water as required and cook the rice either on the stove or in the rice cooker. Once cooked, fluff the rice and keep it aside.
  3. Remove the cardamom pods and cloves from the rice.
  4. In a large pan, melt 4 tablespoons of margarine for the masala. Add cashews and fry until golden, then remove. Repeat this step for the dried grapes.
  5. Add the seasoned chicken to the pan and sauté. Drizzle some margarine and continue cooking. After about four minutes, add a pinch of salt.
  6. After another minute, introduce ginger and garlic paste. Sauté for a minute before adding curry leaves and tomatoes. Wait for thirty seconds and then incorporate biryani masala, turmeric powder, and chili powder. Cook briefly.
  7. Mix in the diced carrots, beans, and green peas. Cook for a minute or two, ensuring not to overcook the vegetables.
  8. Adjust the seasoning with salt and lime juice. Add half of the coriander leaves and mint leaves. Cook for an additional minute or two.
  9. Finally, add the cooked rice to the masala and gently mix for about two minutes. Garnish with the reserved cashews, grapes, and remaining coriander leaves.
  10. Your Homemade Chicken Biryani is ready to be savored. Enjoy!
