Christmas Fruitcake Recipe – By Malsha – eLanka

Christmas Fruitcake Recipe - By Malsha - eLanka

Ingredients:

  • 250 grams cherries
  • 300 grams Rulang
  • 500 grams sugar
  • 250 grams butter
  • 80 grams currants
  • 250 grams raisins
  • 250 grams sultanas
  • 250 grams ginger dosi
  • 250 grams Chow Chow
  • 80 grams candied peel
  • 12 eggs
  • 250 grams cashews
  • 1 small jar of strawberry jam
  • 1/2 glass of brandy
  • 1 small bottle of honey
  • 2 tablespoons vanilla essence
  • 2 tablespoons rose essence
  • 2 tablespoons almond essence
  • 1 teaspoon each of cardamom, cloves, cinnamon, nutmeg
  • 2 teaspoons grated lime peel

Instructions:

  1. Chop all the fruits and mix them with brandy. Place the mixture in a large container and seal it for approximately 5 days.
  2. In a pan, lightly fry the Rulang and combine it with butter.
  3. Separate egg whites and yolks. Beat the egg whites with sugar until stiff peaks form.
  4. Add turmeric powder to the beaten egg whites and continue to beat. Incorporate the butter and Rulang mixture.
  5. Add the soaked fruits to the batter and mix thoroughly.
  6. Stir in honey, rose essence, almond essence, vanilla, and the powdered spices.
  7. Mix in the strawberry jam and chopped cashews.
  8. Transfer the batter to a baking tray and bake at 180°C for about an hour.
