Sambar is a traditional South Indian lentil-based stew renowned for its rich and aromatic flavors. Prepared with a medley of vegetables such as carrots, eggplants, bananas, beans, tomatoes, pumpkin, and potatoes, combined with lentils, this hearty dish is a delightful celebration of diverse textures and tastes. The vegetables are boiled until tender and then crushed to form a thick, savory gravy. The tempering, featuring ingredients like onions, dried chili pods, mustard seeds, and curry leaves, adds a fragrant and zesty touch to the sambar. Seasoned with pepper and raw turmeric powder, and infused with the subtle warmth of cinnamon, this dish offers a burst of authentic South Indian flavors. Ingredients:

  • 1 carrot
  • An eggplant
  • A ripe banana
  • A handful of beans
  • 2 tomatoes
  • 100 grams of pumpkin
  • A potato
  • 50 grams of lentils
  • 1 onion
  • A few green chili pods
  • 3 dried chili pods
  • Mustard seeds
  • A pinch of pepper powder
  • A bit of raw turmeric powder
  • A piece of cinnamon
  • Salt to taste
  • Curry leaves

Instructions:

  1. Wash and chop all the vegetables, including carrot, eggplant, banana, beans, tomatoes, pumpkin, and potato. Also, add lentils to the mix. Place all the chopped ingredients in a bowl.
  2. Sprinkle salt and pepper powder over the vegetables. Add enough water to cover the vegetable pieces, and then boil them until well-cooked.
  3. Once the vegetables and lentils are thoroughly cooked, crush them well to form a thick gravy consistency.
  4. For tempering the sambar gravy, heat a pan and add chopped onions, dried chili pieces, mustard seeds, and curry powder. Allow them to temper the mixture.
  5. Pour the tempered mixture into the cooked vegetables and lentils. Add more water if needed and adjust the salt according to taste.
  6. For enhanced flavor, include raw turmeric powder and a piece of cinnamon.
