Sri Lankan chicken curry, also known as “Kukul mas curry” in Sinhala, is a delicious and aromatic dish that showcases the flavors of Sri Lankan cuisine. It typically combines tender chicken pieces with a rich blend of spices and coconut milk to create a flavorful and creamy curry. Here’s a recipe for Sri Lankan chicken curry:
Ingredients:
- 500 grams chicken pieces (bone-in or boneless)
 - 2 tablespoons vegetable oil
 - 1 large onion, finely chopped
 - 3 cloves of garlic, minced
 - 1-inch piece of ginger, grated
 - 2 green chilies, sliced (adjust according to spice preference)
 - 1 teaspoon curry powder
 - 1 teaspoon turmeric powder
 - 1 teaspoon chili powder (adjust to taste)
 - 1 teaspoon ground coriander
 - 1 teaspoon ground cumin
 - 1 cinnamon stick
 - 2 cardamom pods
 - 2 cloves
 - 1 sprig curry leaves
 - 1 cup thick coconut milk
 - Salt to taste
 - Fresh coriander leaves for garnish
 
Instructions:
- Heat the vegetable oil in a large pan or pot over medium heat. Add the onion and sauté until golden brown.
 - Add the minced garlic, grated ginger, and green chilies. Sauté for a minute until fragrant.
 - In a small bowl, mix together the curry powder, turmeric powder, chili powder, ground coriander, and ground cumin with a little water to form a paste. Add this paste to the pan and cook for a couple of minutes, stirring continuously.
 - Add the chicken pieces to the pan and coat them well with the spice mixture. Cook for about 5 minutes, stirring occasionally, until the chicken is lightly browned.
 - Add the cinnamon stick, cardamom pods, cloves, and curry leaves to the pan. Stir well to combine.
 - Pour in the thick coconut milk and season with salt to taste. Stir everything together and bring the mixture to a simmer.
 - Reduce the heat to low, cover the pan, and let the curry simmer for about 30-40 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.
 - Once the chicken is cooked, remove the lid and continue cooking for a few more minutes to thicken the curry to your desired consistency.
 - Garnish with fresh coriander leaves and serve the Sri Lankan chicken curry hot with steamed rice, roti, or bread.
