Health Benefits of Jackfruit:

Rich in Nutrients: Jackfruit is a nutritional powerhouse, containing essential vitamins and minerals such as vitamin C, potassium, and dietary fiber. These nutrients contribute to overall well-being, supporting immune function and promoting a healthy cardiovascular system.

Aids Digestion: Jackfruit is a good source of dietary fiber, which aids digestion and helps prevent constipation. The fiber content also promotes a feeling of fullness, potentially assisting in weight management.

Sri Lankan Jackfruit Curry, known locally as “Polos Curry,” is a flavorful and aromatic dish that showcases the versatility of jackfruit. Here’s a simple recipe for preparing Sri Lankan Jackfruit Curry:

Ingredients:

  • 2 cups of young jackfruit, cleaned and cut into bite-sized pieces
  • 1 large onion, finely sliced
  • 2 tomatoes, chopped
  • 2 green chilies, sliced
  • 2 sprigs curry leaves
  • 2 tablespoons Sri Lankan curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder (adjust to taste)
  • 1 cinnamon stick
  • 4-5 cardamom pods
  • 4-5 cloves
  • 1 can (400ml) coconut milk
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions:

Prepare the Jackfruit:

Wear oil or gloves to handle the jackfruit as it can be sticky. Clean the jackfruit and remove the seeds. Cut the jackfruit into bite-sized pieces.

Cooking the Jackfruit:

In a large pan, heat vegetable oil over medium heat. Add sliced onions and sauté until they become golden brown.

Add chopped tomatoes, green chilies, and curry leaves. Cook until the tomatoes are soft.

Spice it Up:

Add Sri Lankan curry powder, turmeric powder, chili powder, cinnamon stick, cardamom pods, and cloves. Mix well to coat the onions and tomatoes with the spices.

Add Jackfruit:

Add the prepared jackfruit pieces to the pan. Stir and coat the jackfruit with the spice mixture.

Coconut Milk Magic:

Pour in the coconut milk, season with salt, and stir well. Bring the curry to a gentle simmer.

Simmer to Perfection:

Cover the pan with a lid and let the jackfruit cook in the coconut milk for about 20-25 minutes or until the jackfruit is tender.

Adjust Seasoning:

Check the seasoning and adjust salt and spice levels according to your taste.

Serve:

Once the jackfruit is cooked and the curry has thickened, remove from heat. Discard the whole spices if desired.

Garnish and Serve:

Garnish the Jackfruit Curry with fresh coriander leaves. Serve hot with rice or your favorite bread.
