Sri Lankan chicken curry, also known as “Kukul mas curry” in Sinhala, is a delicious and aromatic dish that showcases the flavors of Sri Lankan cuisine. It typically combines tender chicken pieces with a rich blend of spices and coconut milk to create a flavorful and creamy curry. Here’s a recipe for Sri Lankan chicken curry:

Ingredients:

  • 500 grams chicken pieces (bone-in or boneless)
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, sliced (adjust according to spice preference)
  • 1 teaspoon curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder (adjust to taste)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 cinnamon stick
  • 2 cardamom pods
  • 2 cloves
  • 1 sprig curry leaves
  • 1 cup thick coconut milk
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat the vegetable oil in a large pan or pot over medium heat. Add the onion and sauté until golden brown.
  2. Add the minced garlic, grated ginger, and green chilies. Sauté for a minute until fragrant.
  3. In a small bowl, mix together the curry powder, turmeric powder, chili powder, ground coriander, and ground cumin with a little water to form a paste. Add this paste to the pan and cook for a couple of minutes, stirring continuously.
  4. Add the chicken pieces to the pan and coat them well with the spice mixture. Cook for about 5 minutes, stirring occasionally, until the chicken is lightly browned.
  5. Add the cinnamon stick, cardamom pods, cloves, and curry leaves to the pan. Stir well to combine.
  6. Pour in the thick coconut milk and season with salt to taste. Stir everything together and bring the mixture to a simmer.
  7. Reduce the heat to low, cover the pan, and let the curry simmer for about 30-40 minutes, or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.
  8. Once the chicken is cooked, remove the lid and continue cooking for a few more minutes to thicken the curry to your desired consistency.
  9. Garnish with fresh coriander leaves and serve the Sri Lankan chicken curry hot with steamed rice, roti, or bread.
