  • Canned Fish – 150g
  • Boiled Potatoes – 100g
  • 1 Big Onion
  • 3 Garlic Cloves
  • 1 Tomato
  • 2 Green Chilies
  • Curry Leaves
  • ¾ tsp Ground Cardamom, Cloves & Cinnamon
  • 100g Leeks
  • 1 Small Carrot, grated
  • 3 Cabbage Leaves
  • 1 tsp Salt
  • 1 tsp Pepper Powder
  • 1 tsp Chili Flakes
  • Chopped Ginger
  • ¼ tsp Turmeric Powder

For the Wrapping:

  • 350g All-purpose Flour
  • 1 tsp Salt
  • 1 Egg
  • Water

For the Coating:

  • 200g Breadcrumbs
  • 2 Eggs

Method:

  1. To prepare the filling, heat oil in a pan. Add chopped ginger, ground cardamom, cinnamon, and cloves. Cook for about 1 minute, then add garlic, green chilies, and curry leaves.
  2. Add tomatoes and onions, and sauté for approximately 2 minutes. Next, add turmeric, pepper powder, salt, and chili flakes.
  3. Incorporate cabbage, leeks, carrots, and canned fish. Adjust the seasoning with salt and pepper according to your taste.
  4. Finally, add boiled potatoes and mix the ingredients thoroughly.
  5. For the wrapping, combine flour, egg, and salt in a bowl. Gradually add water while whisking until you achieve a smooth batter. Ensure the batter is neither too thick nor too watery.
  6. Strain the batter to remove any lumps.
  7. Heat a small amount of the batter in a pan to make pancake-like wrappers. Set aside approximately 1 tablespoon of the batter for sealing the rolls.
  8. To assemble the rolls, place a pancake wrapper on a flat surface. Add around 2 teaspoons of the filling in the center of the pancake. Fold the bottom part of the pancake to cover the filling, then fold the opposite sides. Roll up the pancake, applying a small amount of the reserved batter to seal the edge.
  9. Coat the rolls with breadcrumbs. Whisk the eggs in a large bowl and dip each roll in the beaten eggs. Roll the coated rolls in breadcrumbs. Repeat this process for an extra crispy coating if desired.
  10. Deep fry the rolls until they turn golden brown.
