Sinhala New Year Special : Oil-Free Vandu Recipe – By Malsha – eLanka

Sinhala New Year Special: Oil-Free Vandu Recipe - By Malsha - eLanka

Ingredients:

  • 200 ml condensed coconut milk
  • 100 g sugar
  • 1 cup bread flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 tbsp corn flour
  • 2 tbsp hot water
  • Pinch of salt
  • Bell cups or small porcelain cups for molding the Vandu mixture

Instructions:

  1. Begin by caramelizing 100g of sugar in a pan. Once caramelized, add 2 tablespoons of hot water and the remaining sugar to make honey. Ensure to reduce the heat to prevent bitterness in the caramel.
  2. In a mixing bowl, combine bread flour, baking powder, corn flour, and a pinch of salt. Mix well.
  3. Add vanilla extract to the condensed coconut milk and mix thoroughly. Gradually add the flour mixture to the coconut milk to form a loose Vandu mixture.
  4. Grease the bell cups or porcelain cups with butter and fill them with the Vandu mixture, filling them up to about 3/4 full.
  5. Place the filled cups in the steaming part of a rice cooker and steam for approximately 20 minutes.
  6. After 20 minutes, check the Vandu’s consistency by inserting a toothpick. It should come out clean when the Vandu is fully cooked.
  7. Carefully remove the Vandu from the cups. It should have a puffed, exploded shape when cooked.
