Ingredients:

For the Filling:

  • 250 grams boiled and roughly mashed potatoes
  • 3⁄4 cup thinly sliced leek (green part)
  • 1⁄2 fluid ounce chopped onion
  • 3 finely chopped green chilies (adjust to taste)
  • 1 spring curry leaves, finely chopped
  • 1 teaspoon chili powder/paprika
  • 1 teaspoon chili flakes
  • 1⁄4 teaspoon turmeric
  • 1⁄3 teaspoon mustard seeds
  • 1⁄3 teaspoon cumin seeds
  • 1 tablespoon coconut oil
  • Salt to taste

For the Dough:

  • 300 grams bread flour
  • 170 grams milk
  • 20 grams butter
  • 15 grams sugar
  • 5 grams instant dry yeast
  • 6 grams salt

Egg Wash:

  • 1 egg yolk
  • 1 tablespoon milk

Instructions:

Prepare the Filling:

  1. Heat 1 tbsp of coconut oil in a nonstick pan. Add cumin seeds and mustard seeds. When the mustard seeds splatter, add curry leaves, onions, green chilies, and salt. Cook until onions sweat.
  2. Lower the heat, add chili powder, chili flakes, and turmeric. Mix well.
  3. Add mashed potatoes, mix, and then add sliced leeks. Mix on high heat, adjust salt, and turn off the heat. Cool before using.

Make the Dough and First Rise:

  1. Warm the milk slightly. Add sugar, then sprinkle instant dry yeast on the milk’s surface. Let it sit for 2-5 mins until frothy.
  2. Add softened butter, salt, and flour to the yeast mixture.
  3. Knead the dough in a mixer for 10 mins until smooth and stretchy. Adjust with a bit of water if too dry.
  4. Let the dough rise until doubled in size.

Shape and Fill the Buns:

  1. Divide the dough into 8 equal portions. Shape each into a ball and cover.
  2. Flatten each ball, place filling, bring edges to the middle, and pinch tightly.
  3. Flip the filled dough, shape into a round ball, and place on a baking sheet. Repeat for all balls.
  4. Sprinkle with sesame seeds (optional).
  5. Bake in a preheated oven at 400°F for about 12 mins.
  6. Cool for at least 30 mins before serving.
