Today Let’s Try to Make Coconut toffee – By Malsha – eLanka

Coconut toffee, a delectable confection beloved for its sweet and indulgent nature, combines the rich flavors of sugar, butter, and shredded coconut into a delectable treat. With a firm and caramelized texture, this delightful creation serves as both a standalone delight and a versatile topping for desserts like ice cream and cakes. The tropical essence of coconut, paired with the comforting sweetness of toffee, makes this treat a delightful addition to any culinary adventure. Whether enjoyed on its own or used to elevate other desserts, coconut toffee is sure to satisfy your cravings for a blend of sugary goodness and the tropical allure of coconut.

Coconut Toffee - eLanka

Ingredients:

  • 500 g Sugar
  • 60 g Butter
  • 60 g Milk powder
  • 2 tsp Vanilla extract
  • 400 g Shredded coconut
  • Salt
  • Food Coloring

Instructions:

  1. Begin by lining a baking pan with parchment paper or aluminum foil, setting it aside for later use.
  2. Lightly blend the shredded coconut to prepare it for the mixture.
  3. In a saucepan, combine the sugar and water, stirring thoroughly. Allow the mixture to boil until the sugar is fully dissolved.
  4. Introduce the shredded coconut and a pinch of salt to the sugar mixture, stirring continuously as it cooks.
  5. Gradually add the milk powder while continuing to stir the mixture.
  6. Incorporate the aromatic vanilla extract into the mixture.
  7. As the mixture thickens and reduces its watery texture, introduce the butter and mix it in thoroughly.
  8. If desired, add a few drops of food coloring to enhance the appearance and vibrancy of the toffee.
  9. Continue stirring until the mixture reaches the desired consistency and the watery texture is eliminated.
  10. Carefully transfer the prepared mixture into the lined baking pan, spreading it evenly.
  11. While the mixture is still hot, cut the toffee into squares, creating individual bite-sized pieces.
  12. Allow the toffee to cool and firm up at room temperature for approximately an hour, ensuring it becomes solid.
  13. Once the toffee has achieved a firm consistency, separate the cut pieces.
  14. To preserve the freshness and flavor, store the toffee in an airtight container for up to one week.
