Sri Lankan Buttery Cake Recipe - By Malsha - eLanka

Delight in the simplicity and rich flavor of Sri Lankan Butter Cake, a treat that’s effortlessly made and perfect for any time of day. With its luxurious buttery goodness, moist texture, and a touch of vanilla essence, this cake stands out as a favorite.

Ingredients:

  • 250 g Butter
  • 250 g White Sugar
  • 4 Eggs
  • 2 tsp Vanilla Essence
  • 250 g All-Purpose Flour
  • 2 tsp Baking Powder
  • 70 g Fresh Milk
  • 3 Tbsp Canola or Vegetable Oil

Instructions:

  1. Preheat your oven to 170°C (Conventional oven). Line two 25 x 25 cm square pans with parchment paper for easy removal.
  2. In a cake mixer, whether it’s a stand mixer or handheld one, place the softened butter and sugar into the mixing bowl. Mix these ingredients on high speed until the mixture turns creamy and smooth.
  3. Gradually add the eggs, one at a time, into the mixture. Allow each egg to fully incorporate before adding the next.
  4. Introduce the delightful essence of vanilla and the subtle richness of oil into the mixture. Mix these in until the flavors meld beautifully.
  5. Lower the mixing speed and gently fold in the sifted all-purpose flour and baking powder. This step ensures a smooth and even distribution of the dry ingredients.
  6. With a final touch of richness, add the fresh milk to the mixture. Continue mixing until all the ingredients are fully integrated, creating a luscious and smooth batter.
  7. Transfer the prepared batter into the lined pans, evenly distributing it between the two pans. Place the pans into the preheated oven and bake for approximately 35-40 minutes. You’ll know it’s ready when the cake is golden and a toothpick inserted into the center comes out clean.
  8. Once baked to perfection, carefully remove the cakes from the pans and place them on a wire rack to cool. Allowing them to cool ensures the ideal texture and flavor.
  9. After the cakes have thoroughly cooled down, it’s time to unveil the delicious results. Cut them into delightful square pieces, ready to be savored and enjoyed.
